WHITE CHOCOLATE CHIP PECAN COOKIES GUILT-FREE & GLUTEN-FREE
These yummy White Chocolate Chip Pecan Cookies are so good they’ll have you wondering if they’re really even considered healthy! All you need is one small bowl and about five minutes to pop these babies in the oven! You’ve got to try them!

1.5 cups almond flour
1.5 tbsp sugar
1 tsp baking powder
1 tbsp creamy peanut butter
1/4 cup unsweetened almond milk
1 tbsp raw honey
1/2 tbsp vanilla extract
1/4 cup white chocolate chips
1/8 cup chopped pecans
Preheat the oven to 350°. In a small bowl, mix together all the ingredients except the white chocolate chips and pecans with a spoon.
Fold in the white chocolate chips and pecans. Make eight balls of cookie dough with a good ratio of chips and pecans. Place them evenly on a sprayed cookie sheet about two inches apart.
Use the back of a silicon spatula to flatten the balls down a bit (they should be about 1/2 inch thick).
Gently press a white chocolate chip or two and some crushed pecans on top of each cookie. Fix the edges of the cookies by pressing around them gently.
Bake the cookies at 350° for 17 minutes, or until they’re lightly golden around the edges. Immediately transfer to a wire rack to cool for 10 minutes.
