GUILT-FREE BROOKIES

Nothing is better than a brownie and cookie all in one! These are absolutely mouthwatering — I have no idea how something so good can be guilt-free, gluten-free, & dairy-free! It has the perfect amount of sweetness and is just under 170 calories! You will LOVE them!

INGREDIENTS

FOR THE COOKIE:​
  • 1.5 cups almond flour
  • 2 tbsp sugar
  • 1 tsp baking powder
  • 1 heaping spoonful of creamy peanut butter
  • 1/4 cup oat or almond milk
  • 1 tbsp raw honey
  • 1/2 tbsp vanilla extract
  • 4 tbsp organic chocolate chips

FOR THE BROWNIE:
  • ​4 tbsp organic chocolate chips
  • 2/3 cups almond flour
  • 2 tbsp sugar
  • 2 tbsp unsweetened cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tbsp raw honey
  • 1/2 tbsp vanilla extract
  • 1/4 cup oat or almond milk

DIRECTIONS

  1. Preheat the oven to 350°. For the cookie: In a small bowl, mix together 1.5 cups almond flour, 2 tbsp sugar, and 1 tsp baking powder. Add one heaping spoonful of peanut butter. Then, mix in the 1/4 cup oat milk, 1 tbsp raw honey, and 1/2 tbsp vanilla extract. Fold in the 4 tbsp chocolate chips.
  2. In a square baking pan lined with parchment paper, press the cookie batter evenly across the bottom of the pan with a silicone spatula. Add a couple more chocolate chips to the top if you need to balance any areas!
  3. For the brownie: In a small bowl, melt the 4 tbsp chocolate chips in the microwave for 30 seconds and mix well. Heat again for another 30 seconds and mix until completely smooth. Mix in the 1/2 tbsp raw honey and 1/2 tbsp vanilla extract, then set aside.
  4. In a separate bowl, mix together the 2/3 cups almond flour, 2 tbsp sugar, 2 tbsp unsweetened cocoa powder, 1/2 tsp baking soda, and 1/4 tsp salt.
  5. Mix the dry ingredients into the melted chocolate until combined. Then, add the 1/4 cup oat milk and mix until smooth and combined.
  6. Pour and spread the brownie batter over the cookie batter in the pan evenly. Then, add a few chocolate chips over the top. Bake at 350° for 20 minutes. Allow it to cool for at least 20-30 minutes before cutting into with a large knife!
