PREP: 5 M • COOK: 10 M • YIELDS: 12

INGREDIENTS

  • 2 cups flour
  • 1/4 cup sugar
  • 4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 3/4 cups milk
  • 1/4 cup unsalted butter, melted + more for pan
  • 2 tsp vanilla extract
  • 1 egg
  • 1 cup chopped walnuts

DIRECTIONS

  1. In a medium sized bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
  2. Make a well in the center of the dry ingredients and add the milk, melted butter, vanilla extract, and egg. Whisk until fully combined. Fold in chopped walnuts.
  3. Heat a pan on medium heat. Melt 1/2 tbsp unsalted butter all over the pan. Pour 1/4 cup of batter into a perfect circle (you can spread it quickly after pouring if needed). Cook on one side until you can easily slide your spatula underneath (about a minute).
  4. Flip and cook on the other side until golden (another 45-60 seconds). You really just have to test out the first one and see how fast they cook on your stove and pan without being burnt or undercooked! Pancakes are usually trial and error.
  5. Once all pancakes are done, stack your plate, throw on some fresh sliced bananas, sprinkle more walnuts, and sift some powdered sugar on top if you’d like!

ENJOY!
